Eggs???Ermmm yummy…do you like eggs? Mostly people like eggs and never think about the protein in the eggs….and sometimes we only buy eggs from grade A and B…so what the difference between them???? Actually protein has a large number of important functions in the human body and in fact, the human body is about 45% protein. It’s an essential macromolecule without which our bodies would be unable to repair, regulate, or protect themselves. So we should choose the best eggs to get optimum protein. In my opinion, actually grade does not depends on size of eggs
, because from my finding in experiment about Biuret Assay, I find that protein in eggs of grade B has higher absorbance which is 0.823, grade A is 0.807, grade C is 0.579 while X is 0.775.

I also think, its does not matter if we buy eggs from grade A because it takes only 0.016 differences but if we want to save money, better we buy eggs from grade B. The yolk or yellow portion makes up about 33% of the liquid weight of the egg. It contains all of the fat in the egg and a little less than half of the protein. With the exception of riboflavin and niacin, the yolk contains a higher proportion of the egg's vitamins than the white. All of the egg's vitamins A, D and E are in the yolk. Egg yolks are one of the few foods naturally containing vitamin D. The yolk also contains more phosphorus, manganese, iron, iodine, copper, and calcium than the white, and it contains all of the zinc. The yolk of a large egg contains about 59 calories. So, I conclude eggs from grade A, high in calories but in protein it less. As conclusion I think the grade of eggs not depends on their protein so we can choose eggs from grade B and we can budget our money…….and for calories it not show higher differences between grade because if the one egg of grade A we can get about 35sen and for grade B we can get 15sen of one egg, so we get 2 eggs with higher in protein and calories compared 1 egg from grade A…..
